FIRST FLUSH

First leaves of spring

Hadong · Ujeon before Gok-u 50g

Hadong, April dawn
The most tender first leaves
Hand-picked daily batch

Before Gokwoo, only a few days a year

For about ten days before Guyu (around April 20), we only pick the first buds sprouted from the tea plant's winter energy. Even if one person picks all day, it won't fill a single basket.

Mid-April
Ujeon
First flush tea picked before Gogu. These are the leaves in this box.
Early May
Sejak
The leaves grow a little, deepening the aroma.
Late May
Jungjak
More savory with a hint of astringency.
June
Daejak
The leaves become large and firm, so they are used for fermented tea rather than roasted tea.

Roasted nine times and rolled nine times.

The leaves curl between the heat of the cast iron pot and the palms, locking the aroma inside.

The hotter the pot, the faster the hands must be.

A tea maker who has roasted tea in Hadong for 30 years (Example)

After roasting, the leaves shrink to one-fifth of their original weight. A 50g tin holds the touch of several spring mornings.

Finely rolled ujeon. When it touches water, it unfurls back into the shape of the first leaf.

★★★★★Jo**50g

Sweetness in the first cup, aroma in the second, and nuttiness in the third. I look forward to it every morning.

Steep overnight in cold water during summer.

SUMMER

5g of tea leaves, 500ml of cold water, 6 hours in the fridge. It extracts less astringency than hot water, leaving only sweetness.

The time for a cup of tea

Slowly

One teapot, one cooling bowl, two cups. The simpler the tools, the better you can see the tea's color.

If you don't have a teapot

Put the tea leaves directly into a mug, and after 1 min, strain them into another cup.

In the office

Mix 1/3 cold water with hot water from a water purifier to get around 70℃.

When taking it out

Put 2g in an empty tea bag, place it in a tumbler, and remove it within an hour.

How should I store this?
Keep the lid tightly closed and refrigerate for a longer-lasting aroma. Leave it at room temperature before opening.
Does it contain caffeine?
Green tea contains caffeine. Reduce the amount in the late evening.
Are these this year's leaves?
We only send leaves picked that spring. The manufacturing date is written on the bottom of the tea canister.
It tastes astringent and bitter.
This happens when the water is too hot or brewed too long. Cool the water by pouring it once more, and reduce the first brew to 40 seconds.
What should I do with the steeped tea leaves?
Squeeze out the water and mix with soy sauce and sesame oil like a vegetable side dish. If dried, it can also be used to deodorize the refrigerator.
